Beef & Cabbage Stir-Fry

Ingredients:

Stir Fry:
1 tbsp avocado oil or your favorite cooking oil
1 onion, chopped
1 lb beef sirloin or flank steak, thinly sliced
1.5 cups egg whites
4 garlic cloves, minced
1 inch ginger, grated
1 head of cabbage, thinly sliced – about 8 cups
1/2 cup shredded carrot
1 cup shelled edamame
2 tbsp hemp hearts (for garnish)
Salt & pepper to taste
Green onion slices and sesame seeds for garnish
Sauce
1/2 cup coconut aminos
1 tbsp rice vinegar
2 tsp sesame oil
1/2 tsp crushed red pepper flakes
Instructions:
Stir together all the sauce ingredients and set aside.
Heat oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer and cook for 2-3 minutes per side until browned but not fully cooked through. Remove and set aside.
In the same skillet, add the onion and cook, stirring, until translucent, about 5 minutes.
Stir in ginger and garlic for 1 minute until fragrant.
Push the onion mixture to one side and pour the egg whites into the empty space. Scramble until cooked, then mix everything together.
Stir in shredded cabbage, carrots, edamame, and the prepared sauce. Cook, stirring, until the cabbage is wilted, about 5 minutes.
Add the cooked beef back to the skillet and toss everything together. Cook for 1-2 minutes to heat through.
Taste and add salt and/or pepper as needed. Serve warm, garnished with green onions, sesame seeds, and hemp hearts.
